BBQ Salmon Tartlets

I am a big fan of party food. Cute little morsels that allow you to eat with your hands and still mingle around the room. The best party food packs a punch of flavor in 2 or 3 bites, doesn’t fall apart when you eat it and looks pretty! My favorite part of planning a party is all the delicious bites I get to concoct. This got me to thinking… Why do I only make party food for parties? Why not make it for me?

 

I made these cute little tartlets up on a lazy Saturday afternoon and was so excited about them that I had my own little one-person party! And with these calories stats, I felt perfectly fine to indulge in it. Each tartlet is almost the size of a muffin and packed with smoky bbq flavor and good-for-you spinach. Try them for your next big (or little!) party.

 

Ingredients:

  • 1 14.5 oz can pink salmon
  • ½ (10oz) package of frozen spinach, thawed
  • 2/3 cup cooked brown rice
  • 1 large egg
  • ¼ cup ketchup
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp chili powder
  • 1 tsp smoked sea salt
  • 1 Tbsp freshly ground black pepper
  • 1 sheet puff pastry, thawed to room temperature (only ½ is used)
  • Flour for dusting

 

Directions:

Preheat oven to 400 degrees. Spray a 12 cup muffin tin with cooking spray.

 

Put all ingredients except the last two in a large bowl and mix thoroughly with a fork or your hands.

Place the thawed puff pastry on a floured surface, dust the top with flour and roll out with a floured rolling pin until it has increased by 1/3-1/2, approximately a 12 inch square. Using a 2 inch cookie cutter or juice glass, cut out 12 circles. You should only use ½ the pastry dough. The remainder of the puff pastry can be used for something else or a double recipe!

Line each of the muffin cups with one puff pastry circle, pressing into the bottom and sides. Fill the muffin cups evenly with the salmon mixture.

Bake for 20-25 minutes or until the top is golden brown. Remove from oven and let cook 5-8 minutes. Run  a knife around the edges of the muffin cups and carefully remove to a platter.
