October is Non-GMO month and I am celebrating it with cheese. Rumiano cheese to be exact. Rumiano Cheese Company’s organic cheese and organic butter are the first in the world to obtain non-GMO verified certification from the Non-GMO Project. They have a huge variety to please every taste and include both organic traditional cheeses and natural cheeses.

GMO’s have been a hot political issue lately but what are they exactly? GMO stands for genetically modified organisms. These organisms (plants and animals) have been altered through gene-splicing, often with the goal to create a food source that is more tolerant to drought, disease and pesticides and to create a larger yield. These DNA modifications cannot occur in nature nor can they be achieved through crossbreeding. Many countries have banned GMO’s and others require labeling of all GMO products.

The Non-GMO Project is a non-profit organization that works to educate consumers about GMO’s and is dedicated to providing non-GMO choices. They started Non-GMO month in 2010 to raise awareness about the issue. Their goal is to help consumers make an informed choice and they support GMO labeling. They are the only non-profit third party to offer verification for non-GMO products.

I decided to give Rumiano’s cheese a melty test and made these super quick Toasty Olive Tomato Melts. I used multigrain bread for the heartiness and nutrition packed goodness but you could use any bread you like. I also topped it with a homemade muffaletta mix but you could use your favorite olive tapenade or other olive or pickled vegetable spread. I used Rumiano’s mozzarella cheese and it melted to a light brown gooiness. I also thought their sharp cheddar would add a delicious savoriness when melted. These make a great snack or even a light meal with a salad. The best part? They are ready in less than 10 minutes from start to finish!

Servings: 2 • Serving Size: 2 pieces • Weight Watcher Points+: 7

Ingredients:

  • 2 slices multigrain bread
  • 4 Tablespoons olive spread (such as tapenade or muffaletta spread)
  • 4 tomato slices
  • 1 ½ ounces Rumiano mozzarella cheese, thinly sliced

Directions:

Preheat the broiler on high. Cut each bread slice in half. Top each with 1 Tablespoon of the olive spread and a tomato slice. Divide the cheese slices evenly on top of each piece. Place all prepared slices on a baking sheet and under the broiler for 5-6 minutes or until the top starts to brown. Serve immediately.
